I think this is one of the quickest, easiest and tastiest Spring soups out there. Thankfully I think the last of the really cold snaps is now past us, so I've been enjoying being able to experiment more in the kitchen with things that are not thick soups or heavy stews! One Halloween my parents helped me throw a massive themed house party for my friends and we made great vats of this soup (a Nigella Lawson recipe) and it was quick and simple; the cheese in the pool of the green made it seem like we were serving cups of slime!
You will need 500g frozen peas, two spring onions, a chicken stock cube, a mozzarella ball (mozzarella pearls also are great for this but they cost a little more!) and some salt and pepper to season. This will make four portions, but the recipe is really easily halved. it also heats up really quickly in the microwave!
Top and tail the spring onions, removing the outer layer, then score them down front and back with a sharp nice to make sure maximum flavour can make it into the soup.
Cook the peas until tender in the stock made up with 800ml of boiling water with the spring onions in the pan.
While the peas are cooking, cut the mozzarella into cubes about the same size as your thumbnail.
Remove the peas from the heat and throw away the spring onions. Blend the peas and stock with a hand blender until the soup is evenly broken down. Return the pan to the heat and add the cheese, gently stirring until the cheese starts to melt a little. Serve and enjoy!
