Easter Biscuits & An Icing Class With The Biscuiteers

When I lived in America and had to mail order gifts for people at home, I ran out of the usual chocolate and flowers for my Mother, and I was struggling for something a bit more inventive to send her. I’d read about the Biscuiteers and their then mail order, intricately iced biscuit service on a blog way back in 2012, so I decided to have a box of iced butterflies delivered. I got her to open them up over Skype with me, and needless to say if you’ve seen any of the boutique’s amazing designs, we were both very impressed with everything from the intricate sugar work, clever concept to the pretty tin and bright tissue paper they came presented in.

Fast forward to a few weeks ago, when the Biscuiteers team emailed me to see if I wanted to come along to one of their Easter icing classes. I’ve popped by their Notting Hill boutique and icing cafe (where you can pop in and ice your own individual biscuits with a pot of tea or a glass of homemade lemonade) a couple of times since it opened (they now also have one in Battersea), and I’m still wowed by their ever evolving designs every time I go in. So, on Thursday I popped along to learn how to ice a box of their Fabege style egg biscuits (the class to ice the biscuits to take away with you and learn all the Biscuiteer magic tricks costs £78 per person, but you can just buy the box of 8 iced by the professionals to give as a gift for £30 here!)

In case you did not know, as well as biscuits, Biscuiteers also sell personalised chocolates (yes, that means you can also buy iced Easter eggs from them too, so much better than Thorntons!) and simply stunningly iced personalised party and celebration cakes. I think this Beatrix Potter birthday cake should have really said ‘Hoppy Birthday’, though! Judging by the sides, I’d just get them to bake me a bumble bee cake.

Easter Icing Class with Biscuiteers
After wandering around the store for a bit and scoping out future gifts for friends and family (class attendees get 10% off of all purchases on the day) we headed downstairs for the two hour class. I’m not going to give away too many of the Biscuiteers hints and tips here because I honestly would recommend the class as a great gift to give someone (and for you to go along too, of course!) but here are a few takeaways: the icing you need to use to make biscuits like this is royal icing. You can either buy it ready to mix with water, or make it by mixing icing sugar, egg white powder and water. To get the bright colours, you need to use gel colours. To get a nicely iced biscuit, you need to mix thick icing and draw a border around the edge of the biscuit, let it dry, then flood the space with runnier icing; the Biscuiteers then bake this for an hour in a 80 degree oven to help it set. Then, you can go to down with icing bags of the thicker icing cut to various thicknesses at the tip.

While I was much happier with some of my biscuits than others (I’m showing you the best ones!), believe it or not I iced these! With the icing, I learnt that some techniques suited me better than others (I like close thick ziggzag lines, and dots!), but now I do really want to start making pretty biscuits like these for special occasions at home. Maybe if I practice I’ll be good enough in 7 months time to put together a tutorial for you all on how to make some basic pumpkin, bat and tombstone biscuits for Halloween? I already have the cutters!
