An easy, elegant twist on the classic French 75 cocktail.

- 1/2 tbsp We Are Tea Supreme Earl Grey Loose Tea
- 110ml (4 fl oz) Gin (I typically use Gin Mare)
- 4 tsp Freshly Squeezed Lemon Juice
- 2 tsp Simple Syrup
- Chilled Champagne
- 2 Twists Lemon Peel (you can make these with a vegetable peeler before squeezing the juice)
Instructions
- To infuse the gin, stir together the loose tea and the gin and leave for two hours. Strain out the tea leaves, and divide the gin between two glasses.
- Add 2 tbsp of lemon juice to each glass, and 1 tbsp of simple syrup.
- Top up each glass with chilled champagne, and garnish with a twist of lemon peel. Enjoy straight away.
