Recipe: Pea & Courgette Fritters
One thing my parents always grow loads of each summer is courgettes. We have them spiralised as a summer side, halved and seasoned with French sea salt before griddling them on the barbecue until they get a nice char, and in my favourite form: courgette fritters. I’ve made so many different fritter recipes over the years (summer veggies, root veggies, Jewish-style potato latkes with and without ribbons of smoked salmon folded through the batter) but my favourite that I keep making at the moment is this courgette fritters recipe I wrote for BBC Food. I’ve added more texture to the fritters with the addition of peas, and added a little flavour boost with some Indian-inspired spice. And my favourite bit? A mango chutney-spiked yogurt on the side, perfect for dipping.
