Sausage & Gnocchi Bake

I think this traybake has to be one of the first things I cooked for my boyfriend. I know what the very first thing I made for him in my own flat was what was then my go-to recipe for homemade lasagna, but over at his place in the galley0-like shared kitchen where the most basic meals were king, aside from various experiments at getting chicken tikka masala and butter chicken right, it was this easy, all in one tray bake featuring fat, juicy sausages, mixed red, yellow and orange peppers (both our favourite vegetable) and little pillows of roasted gnocchi, wonderfully crisp on the outside, but still soft, fluffy and tender on the inside. It’s quick, easy, and perfect if you either don’t have the time for, or the space for washing up.
