Easy Sheet Pan Merguez with Red Peppers & Crispy Chickpeas

This week for my Weekly Meal Plan I thought I’d go all out with some bright, bold, Middle Eastern colours and flavours. Summer may officially be over, but that does not mean you can’t make a whole load of dishes (that are still comforting for the cooler evenings) from warmer climes to brighten up your weeknights.

This week for #MeatFreeMonday these fritters are a great way to use up the end of the summer courgettes and capture a bit more of that sunshine before it vanishes altogether for another year! The recipe makes double the yogurt sumac lemon sauce you need; it would be delicious served with any of the weeknight dishes below!

I love this really comforting lamb dish where all the delicious cooking juices and spices are absorbed into the aubergine. A big bowlful is great on its own, but perhaps serve it with some flatbreads or a green salad.

Lamb again tonight, but this time in the form of some delicious Merguez sausages in this Moroccan-inspired sheet pan supper that really does not need any more additions to make a meal. However, if you’re feeding hungry boys (who always seem to think portions are too small!) again some flatbreads on the side would not go amiss!

Chicken thighs are one of my all time favourite weeknight go-tos, and here they’re roasted in a tangy, Turkish marinade that is really more-ish. Serve with your favourite salad, veggies, grains – whatever you fancy!

You know me, I think Fridays are for fun foods (usually because I don’t drink during the week and I’m also opening a bottle of wine!) This week why not join me in some Middle Eastern lamb (yes again – it is my favourite way to eat lamb!) pitta nachos as a bit of a sharing dish in front of a Netflix binge! (Though, actually I’m on Criminal Minds from Sky box sets right now, how is it I never watched it before?!)
