Weekly Meal Plan: Día de Muertos
Today in Mexico is the festival of The Day of the Dead, so I thought I’d take that inspiration and come up with a Mexican-themed Weekly Meal Plan today! Some of these dishes are what we’d all think of as Mexican, few are more traditional and there are a couple in there that are more of my own invention with a Mexican flavour – also, I’ve included some more of my favourite Mexican treats at the end of this post for you to enjoy over the weekend!
Monday: Mexican Roasted Sweet Potato, Radish & Tomato Bowl
We’re going vegan (or vegetarian, depending on if you’re vegan your views on honey) for Meat Free Monday today with my Mexican Roasted Sweet Potato, Radish & Tomato Bowl. Feel free to mix it up a bit with whatever veg you have in the fridge at the moment; the real hero of this dish is the super addictive chilli honey dressing.
Tuesday: Mexican-style Chicken & Pepper Stir Fry
I love this really simple chicken stir fry, cooked with Chinese techniques but given Mexican flavours. It’s a Tuesday night and it is dark outside. Make this with pouch rice so it can literally be on the table in 20 minutes.
Wednesday: Homemade Chicken Fajitas
I know I always link to my Homemade Chicken Fajitas, but it is because they’re one of my favourite recipes I’ve ever created – I also make them with king prawns and steak depending on what I have to hand. If you own a copy of Student Eats, there is a recipe in there to turn the leftovers into burritos, which is lunchbox goals.
Thursday: Cajun Prawn Tacos with Barbecue Corn & Avocado Salsa
You could serve these on Taco Tuesdays, but I prefer to turn to tacos later in the week as I find that the further I get into the week, the more I’m craving something fun for dinner! All of these fixings also go great with brown rice in big flour tortillas for a more substantial meal (0r if you’re feeding hungry boys!)
Friday: Roast Mexican Chicken with Pumpkin & Pesto
Something a bit more involved for a Friday night as you can work with a glass of wine in your hand (or a margarita, see below!) – I love this chicken dish for this time of year as it is one of those more comforting, but still punchy dishes that is great on an autumn evening. Also, it is a great way to showcase a culinary pumpkins, as pumpkins are for all of autumn, not just Halloween!
