Weekly Meal Plan: Easy One Pot Dinners

It has been just me this week and that means I’ve managed to seriously reduct the amount of time the dishwasher goes on for. Yes it has been because I’m just cooking for one, but it is also because I’ve been seriously leaning into the one pot meals! So, as we’re all *still* trying to bring our energy bills down a bit more, and one pots are great for that, here are five of my favourite one pot meals I totally think you should make for dinner next week!

Monday: Wild Garlic Butter & Pea Risotto

It is official: wild garlic season (in some parts of the country at least!) is here! Once I’ve made up a batch of wild garlic butter for the fridge my favourite meat-free comfort dinner to make is this simple risotto with peas from the freezer and a glossy finish from the compound butter.

Tuesday: Spanish Lamb Neck Stew

I adore this delicious Spanish-style stew made with lamb neck, such an underrated yet tender cut. Make this ahead and simply heat it through and thicken with a mixture of garlic and breadcrumbs just before serving with crusty bread.

Wednesday: Slow Cooker Chili con Carne

You can’t get much better than the slow cooker for one pot meals and this simple minced beef chilli is wonderfully hearty on a chilly day with all your favourite toppings – have you heard there is a cold snap coming?

Thursday: One Pan Sweet Israeli Chicken

If you’re after something a little more special but still totally achievable on a weeknight I think I’ll join you in dusting off this sweet, sour, spicy chicken recipe packed with slow cooked shallots, sweet potatoes and a rich red wine sauce. Keep it truly a one pan meal by serving it with crusty bread, but couscous usually works really well here too.

Friday: Skinny Turkey Burgers

Who said the grill pan does not count as a pan? My mother’s easy, healthy turkey burger recipe is the perfect thing to round off the week with. I love that you can shape these up to a day or two ahead and keep them covered in the fridge ready to grill at a moments notice.

A few easy dessert recipes to get us through the last few weekends before spring: 3-ingredient Nutella Cheesecake Cups, Leftover Croissant Bread Pudding, Olive Oil Chocolate Mousse with Fleur de Sel, Frozen Berry Buttermilk Cake, Chocolate & Lime Swiss Roll, Proper Baked Rice Pudding.
