Weekly Meal Plan: Spring Greens

It’s that type of weather I find really difficult at the moment (especially to plan for!) because one day it is really nice and warm, sunny, tentative sundress (with a cardigan!) and sandals weather like it was yesterday, but cold and a little bit rainy like it is today the next. So, for this weeks Weekly Meal plan I thought I’d share five easy weeknight recipes full of spring greens, perfect to perhaps eat outside on the patio on warmer days, but that are equally as delicious enjoyed in the warm and the dry while watching the rain pitter patter down outside!

Monday: Charred Tenderstem & Cherry Tomato Rice Bowl with Romesco Sauce

This is one of my ideal Meat Free Monday dishes. I think tenderstem broccoli is best slightly charred under the grill or on the barbecue, and I also think it is one of the best things to eat slathered in a bright, zingy homemade romesco sauce. This recipe makes a jar for the fridge; I also really love it with roast chicken.

Tuesday: Bacon, Beetroot & Broccoli Frittata

I love a good frittata for dinner as the leftovers can be sliced up and packaged in foil to take to work the next day for speedy breakfasts, or to be eaten with a salad for lunch. Both the beetroot and the potato element in this frittata come from the beetroot gnocchi which is just magical when baked this way, all crisp on top and soft and fluffy on the inside. Mix up the flavours with your favourite gnocchi brands and different veggies!

Wednesday: Pasta with Spring Greens & Fresh Spinach Pesto

‘Tis the season for all of the delicious early spring onions, snap peas and asparagus, and I think they’re best eaten blanched, and tossed with a homemade pesto pasta and lots of parmesan cheese like in this easy, vibrant recipe – perfect to enjoy hot or cold! The pesto especially is great for using up a bag of spinach!

Thursday: Roasted Spring Vegetable Chickpea Bowl

If you’re not in the mood for blanching your spring veggies and tossing them with pesto pasta, they’re also delicious roasted and tossed with chickpeas for a warm salad. This is another that is also delicious warm or cold!

Pea & Mint Crusted Salmon with Appletiser

Friday: Pea & Mint Crusted Salmon with Brown Rice and Crispy Kale

For your Fish on Friday fix next week, make the most of fresh spring peas (or that bag of frozen at the bottom of your freezer!) with a pea and mint crusted salmon, served with a pile of brown rice and crispy kale. I know it is a bit healthy for a Friday night, but that can be balanced out with a nice cold glass (or two!) of white wine, right?
