Iceland totally blew me away. I only spent a couple of days on this incredible island where it is always daylight in summer, and pretty much always dark in winter – but I can’t wait to get back; I want to eat more of Iceland’s incredible cuisine in Reykjavik, explore more of Iceland’s incredible natural glaciers and geysers, and visit more tiny fishing villages!
Here are guides to some of the best of Iceland.
My second cookbook contains 100 delicious dinner recipes, all of which are either vegetarian, vegan or which celebrate fish and seafood - all cooked in either one pot or one pan.*
