Weekly Meal Plan: A week of dinners in the Slow Cooker

After years of thinking that I did not need a slow cooker, after I was presented with one a few years ago I officially fell in love for the days where I have a bit of time in the morning, but I just know that I won’t be in the mood to cook with it. So, if you’re either considering a slow cooker purchase (I have an older version of this #ad) or you’re looking for new recipes to try in your own slow cooker, here are a week of easy, delicious dinners where your slow cooker does all the work!

Monday: Slow Cooker Korean Chicken & Kimchee Bowls

Something a little fun to start off the week, this slightly sticky, very tender and very saucy slow cooker Korean chicken falls apart in it’s sauce as you spoon it into bowls with whatever you have to hand. White rice (I use Jasmine as Korean white rice is pretty hard to get hold of offline), kimchee, sesame pak choi and lots of sliced spring onion are my recommendations!

Tuesday: Slow Cooker Chilli con Carne

I’ve never not made chilli in the slow cooker since getting the slow cooker, and this easy minced beef version is great to batch cook (it also freezes beautifully) ready to be loaded up with all your favourite toppings.

Wednesday: Slow Cooker Barbecue Pulled Pork Sandwiches with Classic Coleslaw

Once you’ve made pulled pork in the slow cooker there is no turning back. This classic barbecue version is as easy as dumping in a piece of pork shoulder, mixing up an easy sauce (that does not require any chopping!), pouring it over and leaving it to cook low, slow and fall apart. I’ve included an easy coleslaw recipe too, but no one will be judging you if you just get it out of a tub instead for a true hump-day minimum effort treat!

Thursday: Slow Cooker Sausage & Butterbean Casserole

This is the most cooked thing in our slow cooker, and one of the rare recipes from this blog we eat at least once a month (one of the perils of always testing new recipes!) It’s easy, flavourful, made from ingredients you can keep stashed in the cupboard and the freezer, and tastes delicious mopped up with lots of crusty bread.

Friday: Slow Cooker Chicken Tikka Masala

Friday night curry night! As you can tell because this post is going live this afternoon rather than this morning I’m having one of those Friday’s where I just wish I’d thought to put this in the slow cooker this morning. It’s a saucy one, so serve it with lots of white rice and naan to mop up the delicious juices!
