Korean Steak, Pepper & Broccoli Stir Fry

I went on an adventure to Chinatown yesterday to stock up on some harder to find Korean ingredients for a few recipes I want to make from Koreatown and Our Korean Kitchen (and for some chilli oil doused Beijing dumplings!) and I found the bright, spicy, colourful flavours of Asian cooking perfect to blow away the freezing cold weather that has just descended on us. So, I thought why not create an Asian-inspired meal plan to sort our your suppers next week full of noodles, stir-fries and a few of my own Asian-fusion twists?

Kimchee Cauliflower Fried Rice with a Sesame Fried Egg

Monday: Kimchee Fried Cauliflower Rice

Monday’s are usually an evening for something a little lighter after the indulgence of the weekend, and I can’t think of a better healthy, weeknight twist on my all time favourite comfort food dish, a Kimchee Fried Rice made with cauliflower rice. And, unlike my classic recipe I’ve served the egg on top (fried off in toasted sesame oil, no less) so if you leave if off and make sure your kimchee is vegan, it can be made vegan too!

Tuesday: Korean Prawn Rice Bowl with Sesame Pak Choi

When most people think of Korean food they think of kimchee, which is why I love my Korean Prawn Rice Bowl because the flavours you get are so different to what you would expect. Be sure to bookmark the sesame pak choi, as it is basically my go-to side for all sorts of Asian cooking, and it is just as delicious cold the next day!

Wednesday: Griddled Vietnamese Chicken Noodle Bowl

Over to Vietnam now with some juicy, flavorful hunks of marinated chicken though served over a fresh, bright noodle bowl. Customise the veggies to your personal preferences, and if you’re feeding a crowd just bring everything to the table pre-prepared so everyone can build their own!

Thursday: Super Saucy Korean Steak, Pepper & Broccoli Stir Fry

I’ve inadvertently included a fair few Korean dishes in this meal plan, haven’t I? This is more of an all purpose saucy stir fry recipe that you can customise with different veggies, and if you don’t have gochujang, my favourite fermented chilli paste to hand I’ve also made this with sriracha with fantastic results, for more of an all-rounder. While I serve it with fluffy jasmine rice, any starchy  side like noodles or rice cakes would also be delicious.

Fun Friday’s! One of my favourite take-out dishes when I lived in Los Angeles were Steak Fries from TLT Food in Westwood Village. They were loaded up with Asian marinated steak pieces, Asian slaw and a punchy, herby sauce, and somehow my brain tracked from that to a Banh Mi-flavoured pile of crispy, air fryer French Fries perfect for munching in front of Netflix (or the new season of The Grand Tour, which I think arrives on Amazon Prime tonight!)
