Weekly Meal Plan: In Season In July

Can you believe that it is almost July? Last year was such a weird one that this year seems like it is flying by! While nothing for me will beat autumn as the start of the culinary calendar, I love summer produce that July and August are actually my favourite months in which to cook and eat, with fresh veg coming from the kitchen garden and heaving displays outside the green grocers and at farmers markets. So, without further ado here are five easy weeknight dinner ideas packed full of seasonal July produce!

Monday: Vegan Tomato & Aubergine Curry

I love this curry so much and it is perfect to make with seasonal aubergines – I’m super excited as it is my first time growing them and I’ve already got a couple of flowers on the (long suffering) plants! If you’re also growing tomatoes this year and you have a glut, or you’ve ordered a big tray of them you can always peel and chop a couple up to use in place of the tinned tomatoes for a fresher, brighter curry.

Tuesday: Easy Summertime Courgette Soup

Nothing beats home grown courgettes, though it won’t matter if you’re using the supermarket variety for this quick, easy, delicious soup. Lovely with all manner of creams and herbs as a garnish (whatever you’ve got open in the fridge, really) this simple soup is what we always used to enjoy when I was small and the courgette glut had got just a little bit too much!

Wednesday: Roast Chicken with Honey, Peaches & Thyme

A little bit of a treat by way of one of my all time favourite summer one pan dishes I can’t wait to make every time peaches come back in season, and one I’ve adapted in countless ways (find my One Pan Chicken with Ginger & Apricots over at BBC Food, and bookmark my One Pan Autumn Chicken with Apples & Prunes ready for October) serve it with lots of crusty French-style or ciabatta bread to mop up some of those insane pan juices.

Thursday: Cheats Caesar Salad with Leftover Bread Croutons

It’s summer so of course you can have salad for dinner. This is one of my all time favourites on this site, and it is perfect made with a crunchy head of home grown lettuce which really is at its best right now. Bonus points if your leftover bread croutons come from a homemade loaf!

Friday: Korean Sashimi Salad

This bright, punchy sashimi salad is the ultimate fish-on-friday option for warmer weather, and perfect if you’re into growing your own salad veg because as well as a homemade Korean chilli sauce, fatty chunks of fresh salmon and firm pieces of sushi grade tuna, you’ve got a wonderful combination of mixed leaves, crunchy radishes and juicy cucumber pieces in here, too!
