Weekly Meal Plan: Simple Summer Suppers

I’ve recently switched over to summer dinners, which for me means cooking things that are a lot simpler (but just as tasty!) and more produce driven as all the best stuff arrives at the markets, but we also tend to be eating later and want to spend less time in the heat of the kitchen. These are some of my favourites at the moment!

Monday: Chilli Garlic Courgette Stir Fry

Something punchy, simple, totally plant-based (if you sub in maple syrup for the honey) and perfect for working through that courgette glut for a Monday night. This one is super speedy and great with noodles or rice.

Tuesday: Pork Banh Mi Smash Burgers

Yes I know I keep on telling you about this burger, but we really are obsessed with them at the moment! So quick to make with a quick tangy pickle slaw, they also freeze well as seasoned meat ready to defrost, fry up and enjoy!

Wednesday: Mutton Chops with Homemade Mint Sauce

Some sort of mutton, lamb or pork chop with a zingy sauce and a simple side is my absolute go-to at the moment if I’ve not had time to think about dinner; some of my favourite sides to pair with them at the moment include my Broad Bean, Cucumber and Radish Salad, these Sweet Potato Wedges with a super addictive homemade Almond Tahini, and this platter of Whipped Feta with Beetroot, Dill and Pistachios.

Thursday: Roast Chicken with Honey, Peaches & Thyme

This is one of our all time favourite summer dinners – the peaches get soft and jammy, and the pan fills up with an aromatic sauce from the chicken juices, white wine, honey and thyme as it roasts in the oven. All it needs on the side is some crusty bread; it is also special enough to crack open a bottle of wine to go with it an evening early.

Friday: Courgette and Lemon Risotto with Burrata

Some slow stirring with a glass of wine in hand for a Friday night. I love the sweet caramelised courgette flavour of this risotto plus the zing from the lemon, with a creamy ball of burrata stirred in for good measure. A special supper to finish off the week in style and to unwind with.

And as a little inspiration for the weekend, a few of my favourite nibbles to enjoy with the sort of at-home happy hour I also think is just perfect during the summer time: Honey Mustard Sausage Rolls, Rosemary and Parmesan Shortbread, DIY Marinated Olives, Black Bean and Sunflower Seed Dip, Classic Cheese Straws, Breaded Prawns with Sweet Chilli Dipping Sauce, Parsley Butter Popcorn, Almond and Apricot Sausage Rolls, Air Fryer Halloumi Fries, Baked Plantain Chips with Smashed Avocado.
