Weekly Meal Plan: Easy, Healthy Weeknight Dinners
Yep, it is January and we’re all on a healthy eating kick again. I’m not really one for special diets, so here I have put together just five weeknight recipes that I adore, and just so happen to be quite good for you. For a bit more inspiration, do check out the healthy eating meal plan I put together to kick off 2018.
Monday: Mexican Roasted Sweet Potato, Radish & Tomato Bowl
Depending on your views on honey, this bright, varied and textures Mexican Roasted Sweet Potato Bowl is also vegan, as well as vegetarian. When I’m trying to eat healthier I love using loads of different veggies for colour and crunch, and I think you’re seriously missing out if you don’t also load this bowl up with lots of creamy avocado.
Tuesday: Beef, Tomato & Pepper Casserole with Black Olives
This is a naturally healthy meal that really brings the cozy. Put it in the oven before you leave for work (it won’t die being left in a little longer) or make ahead and heat it up when you need it. Delicious served over a bowl of nutty brown rice, make some extra for both for an incredible, microwavable lunch in the office the next day.
Wednesday: Seared Steak Poke Bowl
While I do have a recipe for making a good, classic salmon poke bowl at home, I know some people are intimidated by using raw fish in home cooking. So, this Seared Steak Poke Bowl makes for a happy – and totally delicious – compromise where you can sear your steak or as much or as little as you want!
Thursday: Baked Eggs with Chickpeas, Tomatoes & Basil
One of my absolute favourites for meal planning, this dish is so easy to put together, is practically store cupboard if you regularly buy tomatoes and keep a pot of basil, and is actually also great for breakfast, brunch and lunch.
Friday: Vietnamese Griddled Chicken Noodle Bowls
Something a bit more fun, but still fresh, healthy and delicious for Friday night. If, like me you’re cutting down during the week but drinking at weekends, this would be delicious with an ice cold Asian beer (or two!)
