I’m working on a project with lots of one pan / one pot / one tray recipes at the moment, so I thought for this week’s Weekly Meal Plan I’d share five of my favourite weeknight-friendly all in one suppers because, let’s be honest – after cooking for Valentines Day yesterday because who has the money to go out and have an overpriced, special restaurant menu (I made chicken tikka masala and a biriyani as J loves curries)- who wants anything high maintenance the following week? (And there are some Weekly Meal Plan favourites in here!)

Baked Eggs with Chickpeas, Tomatoes & Basil

Monday: Baked Eggs with Chickpeas, Tomatoes & Basil

I know, I know. I’ve included this easy one pan in my Weekly Meal plans a few times, but that is because it is simply just that tasty, and really easy to make after a long day at work – just make sure you pick up a can of chickpeas on the way home! It is also great if you do the whole #MeatFreeMonday thing, and if you’re not as big a chickpea fan as I am (I know they’re in this meal plan three times, but they taste so different each time it is like they’re a totally different ingredient in each recipe!) you can always sub them out for cannellini beans here.

Tuesday: Chorizo, Chickpea & Spinach Stew

When I was looking for recipes to include this week, I could not believe I’ve not made this delicious, flavourful, Spanish-style stew for a few years now. It’s something a bit different if you like lots of smoky flavours, and is a great way to jazz up a jar or can of chickpeas and the end of that chorizo you have hanging out at the back of your fridge from the last time you made tapas… It is very nice with a crisp glass of white wine.

Wednesday: One Pan Greek Lamb Meatballs with Orzo & Feta

Greek Wednesdays anyone? The closer we get to spring the more lamb I seem to want to eat (funny, considering how the seasons for the lamb we buy here in the UK *actually* work), and I love this Greek-meatball one pan with saucy orzo for dinner. It serves four but re-heats beautifully, and I for one think a microwaved tub of this would be desk lunch gold – the smell alone making your colleagues super jealous as they dig into their sad sandwiches!

Thursday: One Pan Merguez with Red Peppers & Crispy Chickpeas

I created this easy one-tray when I was doing a single-use plastic free week challenge, and I made it with merguez as my local butcher does brilliant ones and their spicing really buys into the whole Moroccan vibe, but you can use whichever chipolatas you like – I’ve got some vegan mushroom ones in the freezer Sainsbury’s sent me I may give a go (not really my thing, but I want to be able to recommend tasty versions for easy swaps in my recipes!)

Friday: Prawns in Orange, Tomato & Cardamom

One I love for a fun, fishy Friday night, these Prawns in Orange, Tomato & Cardamom make a welcome change to the classic garlic butter treatment, and they’re perfect after work with some crusty bread, and a bottle of nice chilled rose or white wine to share!
