My two favourite cuisines to cook with the flavours of are easily Mexican and Korean: I’m sure that this has something with the amount of time I’ve spent living, cooking and eating in Southern California. So, it stands to follow that I take cooking *all* of the Mexican and Tex-Mex-inspired food around Cinco de Mayo really, really seriously! So, for this weeks Weekly Meal Plan I’ve brought together five of my favourite weeknight-friendly Mexican-inspired dishes, with a few more Mexican-inspired weekend margaritas treats at the end of the post.

Mexican Roasted Sweet Potato, Radish & Tomato Bowl

Monday: Mexican Roasted Sweet Potato, Radish & Tomato Bowl

A #MeatFreeMonday regular in this neck of the woods, this easy Mexican-inspired bowl is great for using up any leftover veggies in the bottom of the fridge that may be leftover from weekend cooking adventures, and is at least veggie, possibly vegan too depending on how you feel about honey. I use Gran Luchito’s Chipotle Chilli Honey in the dressing, which takes it to a whole other level. Chipotle paste mixed with maple syrup would also work!

Tuesday: Cajun Prawn Tacos with Barbecue Corn & Avocado Salsa

Yay for Taco Tuesday! These prawn tacos are super quick on a weeknight, but if you’ve got a warm evening and in the mood, thread the cajun prawns onto some skewers, and give them and the corn a quick once over on the barbecue rather than in a couple of griddle pans for an extra boost of smokiness and char!

Wednesday: Roast Chicken with Black Bean & Strawberry Salsa and Fajita Potato Wedges

Yeah, so it turns out doing a simple roast chicken for a mid-week treat (and so you have a load of leftover chicken to make sandwiches and lunchbox salads for the rest of the week) if you don’t mess around with roast potatoes and a load of different vegetables on the side. I serve this simple roast chicken with chunky potato wedges tossed in fajitas spices, and a fresh and simple strawberry and black bean salsa.

Thursday: Homemade Chicken Fajitas

Learn to ignore those bright red and yellow spice sachets in the supermarket and start making your own chicken fajitas from scratch at home. They’re so easy and healthy, and so customisable: set some cubed and salted avocado or guacamole, pico de gallo salsa, soured cream, shredded or crumbled cheese and some fresh lime wedges on the table and let everyone help themselves!

Friday: Hangover Cure Chilaquiles

These Hangover Cure Chilaquiles are one of my favourite recipes from my first cookbook Student Eats. They make the ultimate breakfast-for-dinner situation, but they’re also perfect for using up a load of leftover salsa, eggs, beans and avocado at the end of a week of Mexican cooking!
