Weekly Meal Plan: Quick Weeknight Dinners To Enjoy Over The Holidays

The holiday season is upon us! Next week our friends across the pond will be celebrating Thanksgiving (I’ve included some recipe ideas for the big meal at the bottom of this post) and then we’ll be well into the festive period with more and more drinks after work (we can do those again!), events and gatherings, all in the lead up to Christmas and New Years. So, while I know I did this a couple of years ago, I thought it would be a good idea to share 5 quick, easy dinner ideas that are sure to prove popular over the time pressed holidays!

Monday: Skinny Pea & Prawn Curry

I like this bright, light and fresh curry, especially during a period when I’ve been eating a tonne of rich food, and it only takes 25 minutes to make to boot! Oh, and did I mention that it is made entirely from store cupboard and freezer-friendly ingredients?

Tuesday: Air Fryer Fried Chicken Sandwiches

My air fryer is a lifesaver for quick meals, and I love this healthier version of a classic fried chicken sandwich for dinner, stuffed into a brioche bun with a handful of lettuce, some sliced pickles and a good squeeze of my homemade sriracha mayo.

Wednesday: Mango Chutney Chicken Rice Bowls

Can you believe that these beautiful rice bowls, full of different flavours, colours and textures take just 20 minutes to make? Pouched rice and your favourite jar of mango chutney are your hero ingredients here to build a rice bowl that is as delicious packed up as leftovers the next day as it is for a mid-week meal.

Thursday: Slow Cooker Sausage & Butter Bean Casserole

I know I share this slow cooker casserole a lot, but that is because I make it a lot, especially when I know things are super busy but I can spare a half hour earlier in the day to throw it together. Crusty bread is a must with this one because there are so many delicious juices by way of the smoky tomato sauce to mop up.

Friday: Fish Finger Taco Wraps with Lime Coleslaw

I always have a packet of fish fingers in the freezer (and not just to make Nigella’s Fish Finger Bhorta) because with a few homemade trimmings they make a stunning last minute meal. These easy wraps take just 15 minutes to throw together: you can slice the avocado and radish, mix the taco spice sprinkle and mix the homemade lime coleslaw whilst the fist fingers cook!
