Weekly Meal Plan: Easy Autumn Dinners

The seasons have finally turned and I don’t think that anyone believes we can still hang onto summer now! In celebration of my favourite culinary season I’ve put together a Weekly Meal Plan of 5 easy to achieve autumnal dinners which I guarantee will have you feeling all the warm and cosy vibes!

Monday: Easy Mixed Mushroom Risotto

I’m a massive fan of risotto at this time of year, and I especially love this seasonal number as we’ve kept things cheap and cheerful by using just fresh chestnut mushrooms (the only things in the supermarket that don’t seem to have skyrocketed at the moment!) paired with a very small amount of dried mixed mushrooms for that savoury boost.

Tuesday: One Pan Sweet Israeli Chicken

With sweet potato wedges, jammy dates and an infusion of cinnamon this one pan chicken dish is something I love to serve around now over wholegrain couscous to soak up that addictive red wine and honey spiced sauce.

Wednesday: Creamy Butternut Squash Pasta with Crispy Bacon & Sage

This Creamy Butternut Squash Pasta recipe is the squash pasta recipe I keep in my back pocket for all occasions and eventualities: the sauce itself is naturally vegan so it works for virtually every diet. Though, if they’re your thing, the topping trio of shaved parmesan, crispy bacon and crispy sage is pretty hard to beat as we head into October.

Thursday: Easy Chicken Paprikash

I love that this Hungarian-style chicken recipe is so quick and easy to make to serve with brown rice and a good dollop of soured cream. Stirring sliced gherkins into the sauce at the end of cooking is my own little touch, but I add that it adds tangy flavour-busts in each bite, and helps cut through the creamy richness of the sauce.

Friday: Garlic Chilli Chicken Curry

Whilst everyone seems to be all about my Aloo Gosht at the moment (and I’ve got another classic British Indian takeaway curry recipe coming next month) hands down the most popular curry recipe on this site – and one of my most popular recipes of all time – is J’s favourite Garlic Chilli Chicken Curry. It is perfect as a Friday night treat packing a good amount of flavour and heat, and in my mind the best way to finish off the week!
