Weekly Meal Plan: A Few Warmer Weather Eats for the Long Weekend & Beyond

How many Bank Holiday Weekend have we had this year?! I for one am not complaining because it is finally warm, sunny and over the weekend I’ll be able to start moving onto warmer weather eats. To celebrate the extra day and to take us into next week, today’s Weekly Meal Plan features 5 recipes that are easy enough for a weeknight (sometimes with a few make-ahead elements) but really are perfect to enjoy over the long weekend. Plus, at the bottom I’ve shared some ‘summer is almost here’ side dishes perfect for weekend entertaining. Enjoy!

Monday: French Onion Quiche

I love this simple quiche recipe for any time of year with a tender pastry and rich, eggy, vegetarian middle. Serve it warm or at room temperature, and to get ahead you can make the pasty and slow cook the onions in advance.

Tuesday: Best Ever Barbecue Ribs (Oven or Barbecue Option)

Believe it or not, ribs are a common weeknight treat in our house because they’re so easy to do in advance – dry rub the ribs, cook them and leave them in foil for up to a day – make the sauce too and stash that in the fridge as well, and you’ll be able to just finish them under the grill when it is time to eat! Bonus points if you serve them with my Air Fryer Truffle Fries. For veg, either corn on the cob quickly blanched in hot water and smothered in melted butter, or else sliced avocado simply dressed with salt and lemon or lime juice is usual in our house.

Wednesday: Mummy’s Turkey Burgers

You would not believe something so delicious was adapted from a diet book, this is one of our favourite family recipes for juicy, tender, flavour-filled burgers, not to mention they’re super healthy too and love being made ahead. Lettuce, sliced cucumber and tomato, and a good dollop of tomato chutney in a seeded bun are musts!

Thursday: Mutton or Lamb Chops with Homemade Mint Sauce

Actually, this recipe is all about that homemade mint sauce, perfect as it is now prime mint season. Yes on weeknights I serve it with lamb or mutton chops, simply pan fried or even better done on the barbecue for a nice bit of char, but if you’re planning a roast leg or shoulder of lamb this weekend (I am!) skip the jarred stuff and make this instead.

Friday: From Scratch Chicken Gyros

Something a bit more fun, you won’t believe how easy it is to make Greek-inspired marinated and griddled chicken, homemade tzatziki and homemade flatbreads in under an hour! Honestly, this is one of our favourite dinners to make (you can use diced pork belly too) and a real treat for sharing.

A few simple side dishes you might find handy entertaining over the weekend: Shaved Asparagus Pasta Salad, Charred Tenderstem Broccoli Caesar Salad, Prawn Cocktail Devilled Eggs, Whipped Feta with Beetroot, Dill & Pistachios, Jewish Potato Salad, Syrian Bulgur Wheat Salad, Israeli Salad, Cucumber Raita Salad Plate, Oregano & Sumac Flatbreads, Sweet Potato Wedges with Almond Tahini, Greek Beetroot Salad, Air Fryer Halloumi Fries.
