Weekly Meal Plan: All-American Weeknight Heroes
Okay so 4th of July has just passed, so I thought it would be the perfect opportunity to share some of my All-American inspired recipes. Everything here is summer and weeknight friendly, inspired by both my time living in California, and my addiction to American food blogs. Bring on all the shrimp, cornbread and barbecue meats!
Monday: Tomato & Cornbread Crumble
It’s #MeatFreeMonday time! There is nothing more American than cornbread, and here it is made into a cornbread crumble topping for a savoury tomato crumble, perfect with a creamy dressed green salad (I love this cheats caesar salad dressing) for a hearty, summery veggie main. I also love it as a seasonal side dish, too!
It’s summer so yes I’m eating sandwiches for dinner, usually with some air fryer sweet potato fries on the side. All of the Po’Boy’s I’ve tried in America have had incredible flavour, but have been a bit oily for my taste, so I’ve gone for a lighter version here, stuffed with cajun prawns, juicy pickles and lots of Kewpie mayonnaise.
Inspired by chef James Martin’s trip to the Tabasco factory, my two person (and naturally vegan) adaption of this bright, punchy, spicy tomato pasta topped with crunchy breadcrumbs (perfect to use up the stale heel of a loaf) is a weeknight hero you’ll want every month. Something a little different from an Italian tomato sauce.
Thursday: Steak with Pickled Jalapeño Relish
Do you ever buy a jar of pickled jalapenos for a recipe or to put on nachos, and you then have no idea what to do with the rest of the jar? This bright, fresh and punchy steak relish is the perfect way to use them up in a pinch.
I love these duck rolls as an easier, small scale alternative to pulled pork. Stuffed into soft rolls with your favourite slaw, with some air frier French fries and a few cold beers on the side you’ve got the perfect Friday night!
