Weekly Meal Plan: Jubilee Weekend Recipes (Perfect for guests!)

Something a little different for this weeks ‘Weekly Meal Plan’ as we celebrate the long Jubilee weekend next week: I’ve still included five simple recipes you could have for dinner, but I also wanted them to be suitable for serving for house guests as you, like me, might have people coming to stay for at least a couple of the days?

Me, I’m planning a Mediterranean / Middle Eastern inspired dinner with some chicken thighs done in my Sticky Pomegranate Molasses Marinade, with this Greek Beetroot Salad and these Sweet Potato Wedges with Almond Tahini on the side, a Korean evening created around my Korean Chicken Stew, and on the first night I’ll be popping my Slow Cooker Sausage & Butter Bean Casserole in the slow cooker so there is no need to stress about what time people are arriving!

Monday: Sweet Potato, Red Onion, Spinach & Feta Quiche

I love a good quiche for entertaining, as you can either serve it warm for a special lunch, or at room temperature, made ahead of when people are planning on arriving. If sweet potato is not your thing, can I instead nudge you in the direction of my French Onion Quiche, my Classic Quiche Lorraine, this classic French Leek Tart, or my Spinach, Bacon & Quark Quiche?

Tuesday: Greek Lamb Pattie & Vegetable Tray Bake

Summer vegetable tray bakes are another crowd pleasing dish I love – this one is great as you can chop the veg and make the wonderfully flavoured lamb patties in advance, ready to be popped in the oven once everyone has arrived, or when you’ve at least got an etc. I know there are potatoes with this one, but good bread and an even better bottle of wine are essential companions.

Wednesday: Skinny Turkey Burgers

If you’re looking for some more traditional British summertime fare you can’t go wrong with homemade burgers. I know our family turkey burger recipe says ‘skinny’ in the title, but that is because we adapted them from a diet book – honestly, they’re packed with flavour, utterly juicy, delicious, and the Phipps’ summer gift to you.

Thursday: Slow Cooker Shredded Mexican Beef Wraps

I think things you can stuff in wraps with everyones choices of fixings you can simply bring to the table for everyone to build themselves are the ultimate crowd pleaser. I often make this Shredded Mexican Beef ahead as it re-heats beautifully, leaving me to focus on other, more important things like that homemade Pico de Gallo, and sneaking a slug of tequila into the guacamole (seriously, try it!)

Friday: Best Ever Barbecue Ribs

Honestly, who doesn’t love a good rack of ribs? It took me years to develop this ultimate recipe for ribs, slow cooked first in the oven with a homemade Southern-style dry rub, before being finished either under the grill or on the barbecue with a generous amount of homemade barbecue sauce. I often serve these with my Buttermilk Polenta Corn Bread, some corn on the cob, and a generous portion of my classic coleslaw.

A few desserts ideas that will really help you celebrate in style: Homemade Strawberry Ice Cream, Raspberry, Pistachio & White Chocolate Roulade, Strawberry & Champagne Jellies, Chocolate, Summer Berry & Amaretti Cheesecake Cups, Boozy Gin & Tonic Jellies with Fresh Blueberries.
